There is something almost magical about a perfectly made mochi. That first bite — the soft, yielding outer layer giving way to a burst of flavour inside — is a sensory experience unlike any other dessert. It is delicate yet satisfying, simple yet complex, and endlessly comforting.

At Taiwan Maami, our mochi collection has become one of our most loved offerings. But getting here was a journey of experimentation, refinement, and a deep respect for the craft behind this iconic Asian dessert.

What Makes a Good Mochi

A great mochi comes down to three things:

The chew. The outer mochi layer should be soft and pillowy, with a gentle elasticity that gives way when you bite into it. It should never be tough, sticky, or gummy. Achieving this texture requires the right ratio of glutinous rice flour, the right hydration, and careful handling — overwork the dough and it becomes dense; underwork it and it falls apart.

Balanced sweetness. Mochi should be sweet, but not cloyingly so. The outer layer carries a subtle sweetness that sets the stage for the filling inside. The filling itself — whether fruit or chocolate — should be the flavour star, with the mochi pastry acting as a gentle, chewy frame.

Fresh filling. The filling is where mochi comes alive. Whether it is real fruit, premium chocolate, or a carefully crafted cream, freshness is non-negotiable. Stale or artificial fillings are immediately noticeable and ruin the entire experience.

Our Inspiration

Mochi has deep roots in both Japanese and Taiwanese food culture. In Japan, mochi-making (mochitsuki) is a centuries-old tradition, with the pounding of glutinous rice into smooth, elastic dough being almost ceremonial. In Taiwan, mochi took on its own identity — adapted with local flavours, filled with everything from peanut to taro, and sold as beloved street food in night markets across the island.

Our approach draws from both traditions. We use Japanese technique — the precision, the attention to texture, the respect for the craft — and combine it with Taiwanese flavour sensibility — bold, playful, and unafraid to experiment. The result is a mochi that honours tradition while feeling fresh and modern.

From Kitchen to Counter

Ingredient selection. Every mochi starts with the right ingredients. We import premium glutinous rice flour from Taiwan for the pastry, ensuring the right protein content for that signature chew. Our fruit fillings use real, seasonal fruits — not concentrates or artificial flavourings. Our Rocher mochis use quality couverture chocolate, and our cream fillings are made in-house.

Texture testing. Getting the mochi wrapper right took dozens of iterations. Too thick, and it overwhelms the filling. Too thin, and it tears. We tested different flour ratios, hydration levels, and resting times until we found the perfect balance — the pastry that is thin enough to let the filling shine but sturdy enough to hold its shape.

Flavour trials. Our flavour development process involved extensive tasting sessions. We tried dozens of combinations before settling on our current collection. Some were too sweet, some too subtle, some simply did not work as mochi fillings. The ones that made the cut are the ones that made us — and our early tasters — reach for a second piece.
